Simple yet delicious.....

Couscous salad with cucumber yoghurt and oven tomatoes

Our latest yummy recipe and Grana Padano entry from member Judith!

Ingredients 
200g cherry tomatoes
 120g couscous
 vegetable stock
 olive oil, salt and pepper
 curry powder, garlic, fresh herbs, fresh
baby spinach leaves, natural yoghurt, half of a cucumber, 
one lemon, garlic, Balsamico and 150g grained GRANA PADANO

Step 1 Oven tomatoes:

Place the tomatoes with a little bit of olive oil and sugar on
a baking sheet lined with baking paper, making sure the
tomatoes are hollow side up.
Bake in the center of the oven for 25-45 minutes depending
on size of tomatoes.

Step 2 Couscous salad:
Place the couscous in a large bowl.
Place the vegetable stock and 1 tablespoon olive oil in a
saucepan, bring to just boiling point, then pour over the
couscous. Cover and set aside for 10 minutes.
Step 3 Fluff couscous with a fork and season with salt,
pepper and curry powder. When couscous is completely
cold, stir in the fresh spinach leafs and the
GRANA PADANO. Add a little bit of Balsamico if you like.
Step 4 Cucumber yoghurt: Chop the cucumber in small cubes.
In a separate small bowl, combine the natural yoghurt, the
lemon juice, chopped garlic, herbs and the cucumber and
stir till all is well mixed.
Finally Put the couscous salad in a glass or bowl and
add the cucumber yoghurt on top and decorate with the
oven tomatoes and GRANA PADANO.
